    Menu - Pork Cutlets with Fennel served with arugula, tomato and goat cheese terrine

    Menu - Rib eye with garlic-thyme marinade served with spicy eggplant and peach, basil and cucumber stuffed tomatoes

    Full Moon Harvest Dinner:

    Saturday August 21st
    Menu - Rack of lamb with mint and capers served with sautéed green beans and tomatoes and arugula, potato, and green bean salad


    Special Local Artisan - Tim and Pat from Beehive Cheese. Beehive's cheeses carry undertones of Utah's unique high-desert and four-season ecosystem. Tim and Pat use only first-class-grade whole milk from Jersey cows at Ogden's Wadeland South Dairy: 350 acres near the salty marches, ponds and mudflats of the mineral-loaded Great Salt Lake. The same nutrient-rich soil that feeds thousands of migrating birds, feeds the lush alfalfa that the cows love to eat. The cheese is also full of the intelligence and imagination of the cheese makers: consider one award-winning cheese, Barley Buzzard, that's rubbed with crushed lavender and exotic ground coffee. Tim and Pat even create the custom cheeses like on requested by a bride-to-be as a surprise for her fiance: a signature wedding cheese rubbed with honey and lavender and aged with a layer of blueberries in the middle. These original and personal touches set Beehive Cheese apart.

    Upcoming Food Preservation Classes @ Copper Moose Farm with Rebecca for 2009:

    May 30- CSA Kitchen Prep Class: Jump start your CSA experience by learning how to prepare your kitchen for the abundance of your weekly share. CSA members are invited to spend the afternoon learning which kitchen tools are most helpful, which techniques create quick, easy access to your veggies, what simple recipes are best for each veggie, and a few convenient preservation techniques. Come out, meet some of your fellow CSA members, and get started eating nutritious local veggies!


    July 18

    - Quick Pickles and Storage Pickles: When you think of pickles, you may think of cucumbers. But, if done properly, you can pickle just about anything! Join CMF for an afternoon of pickling some of the treasures from the farm. You’ll learn safe, easy ways to make quick pickles and storage pickles using our veggies and herbs. There is nothing you may enjoy more than opening your jars of pickled CMF veggies come February!


    Aug 15

    - Tomato Sauces and Canning : Canning tomatoes and pesto is a classic and simple food preservation technique. Join CMF for an afternoon of canning whole tomatoes, tomato pastes, tomato sauces, and pesto. You are sure to leave this workshop with confidence in you tomato canning abilities, knowledge of the use of the hot water bath canning technique, and a jar or two full of sun drenched tomatoes

    Come and learn how to harvest, prep, and cook delicious local meals with members from the CSA and community.

    - Grilled Spiced Lamb Chops with Garlicky Heirloom Potatoes and a Yogurt/Mint Sauce

    * Each dinner is served with a huge, beautiful green salad from the farm, homemade salad dressing with farm herbs, local breads and cheese, homemade local desserts and fruit, and local beer/wine/whiskey.


    2009 Winter Teacher Training @ Lotus Leaf Yoga Studio March 6th will mark the

    beginning of Lotus Leaf Yoga (Heber City, UT) and Yoga Union’s (Portland, OR) 2009 winter 200-hour teacher training. This will be a month long intensive program focusing mainly on voice projection, sequencing, creative class construction, pranayama, anatomy, and yoga philosophy.
