Savory Kale/Chard Gratin

1 yellow onion
1 bunch kale
1 bunch chard
4 table spoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon all-purpose flour
1 cup milk
3 tablespoons dry breadcrumbs
2 tablespoons freshly grated Parmesan cheese

1. Cut onion in half length wise and slice into thin pieces

2. Add olive oil to large skillet, add onions, cover and let onions “sweat”, stirring occasionally

3. Cut Kale and Chard into small pieces, place in skillet and cover until Kale and Chard wilt – 5-10 minutes – medium heat. Remove cover, stir, and cook for another 5 minutes

4. Preheat oven to 400

5. Coat baking dish with small amount of oil

6. Sprinkle salt, pepper, and flour into greens and stir. Increase heat and stir in milk, making a sauce for the greens

7. When sauce has thickened, spread the greens evenly in baking dish, mix bread crumbs with cheese and cover the greens with mixture.

8. Bake until the top is crusty and the edges are bubbling – about 20 minutes

9. Serve hot from baking dish
