October Recipe:
Pumpkin Butter
1 Organic Sugar Pumpkin from a local farmer
¼ cup Lakanto (all natural sweetener)
¼ cup Organic Brown Sugar
¼ teaspoon of salt
1. In pot combine pumpkin flesh, Lakanto, brown sugar, and salt. Cook on a low heat for 20 minutes, or until flesh softens.
2. Remove from heat and blend in a blender until smooth.
3. Return to pot and cook on low heat until the consistency is thick like a softer butter.
4. Place in small Mason jar and refrigerate. You can use your pumpkin butter on homemade breads and muffins.
