Baked Root Vegetables
5 local beets cleaned and cubed
1 large local sweet potato cubed
2 small local turnips cleaned and cubed
1 local rutabaga cleaned and cubed
2 local carrots cubed
4 local garlic cloves chopped into big chunks
1 local onion chopped into big chunks
Olive oil
Salt
Rosemary
1. Preheat oven to 400.
2. Toss all vegetables with a tablespoon or two of olive oil, a pinch of salt,
and a pinch of rosemary, making sure to coat the vegetables evenly.
3. Place vegetables in a baking dish and bake for 30 minutes or until tender. Serve hot.
