Grilled Ramps or Leeks


2 large bunches of ramps or leeks, roots and stalks trimmed and well washed olive oil

1. Boil leeks in lightly salted water until they are just tender. Drain

2. Brush the leeks with oil and grill them for 3 to 4 minutes on each side, or until they are golden.

3. Serve warm with arugula salad.

Kristen’s California Ranger Cookies

1 cup organic butter
1 cup organic sugar
1 cup organic brown sugar
2 local eggs, beaten
1 tsp organic vanilla
2 cups organic rice krispies
1 cup organic corn flakes
1 cup organic oatmeal
2 cups local flour
1 tsp local salt
1/2 tsp baking soda
1 tsp baking powder
1. Cream butter and sugar together.

2. Add the rest of the ingredients in the order given.

3. Make small balls and press down on a greased cookie sheet.

4. Bake at 300 degrees for 10 minutes. (Note: Up here in Park City, I think they need a few more minutes.) Makes 6 dozen cookies.
