July Recipe:

Grilled Halibut with Cilantro Sauce


2 cups fresh local cilantro
1/4 cup organic olive oil (she suggests vegetable oil...but the olive oil was great)
1/2 local jalapeno chili, seeded
1 teaspoon organic grated ginger
3 local scallions
2 tablespoons fresh organic lime juice
2 sustainably caught halibut from our friend Lyf

1. Preheat grill to medium/high heat.

2. Combine all ingredients in a food processor and blend until smooth.

3. Place two pieces of halibut on aluminum foil, cover both with half of the cilantro sauce, and squeeze 1/2 a fresh lemon over both pieces. Put the other half of the sauce aside to spread on halibut once it is served.

4. Fold foil around the fish and grill for 10 to 15 minutes
